Ingredients
1 cup almond flour
1 cup all-purpose flour
1 cup sugar
3 large eggs
½ cup melted butter
½ cup plain yogurt
½ teaspoon cinnamon
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
Pinch of salt
½ cup mascarpone cheese
½ cup heavy cream
2 tablespoons powdered sugar
1 teaspoon rose water
½ cup berry jam
1 tablespoon lemon juice
Instructions
1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round pan.
2. Mix dry ingredients in one bowl and wet ingredients in another. Combine gently.
3. Pour batter into pan and bake for 30–35 minutes.
4. Whip mascarpone, cream, powdered sugar, and rose water until soft peaks form.
5. Mix jam with lemon juice.
6. Once cake cools, spread cream on top, add jam, and swirl.
Notes
Bring eggs and yogurt to room temperature for smoother batter.
Chill the cake before frosting for a clean finish.
Sprinkle with crushed pistachios or rose petals for garnish.
