Ingredients
1 cup all-purpose flour
½ cup + 1 tbsp granulated sugar
⅛ cup + 1 tsp unsweetened cocoa powder
¼ tsp baking soda
¼ tsp salt
⅔ cup hot water
4 tbsp olive oil
2 tsp white vinegar
1 tsp vanilla extract
1 tsp instant coffee
Instructions
1. Preheat oven to 350°F. Grease and line a round 8-inch cake pan.
2. In a large bowl, whisk flour, sugar, cocoa powder, baking soda, and salt.
3. In a separate bowl, mix hot water, oil, vinegar, vanilla, and instant coffee.
4. Add wet mixture to dry and whisk gently until fully combined.
5. Pour into prepared pan and tap gently to release air bubbles.
6. Bake 20 to 25 minutes or until a toothpick comes out clean.
7. Cool in the pan for 15 minutes, then move to a wire rack to cool completely.
Notes
Make sure all ingredients are at room temperature before mixing.
Dust work surface with cornstarch when handling fondant to prevent sticking.
For bold red or black icing, start with chocolate buttercream and add gel food coloring.
Let cake cool fully before decorating.
This recipe can be doubled or halved depending on pan size.
