1 box strawberry cake mix

2 tablespoons all purpose flour

¼ cup neutral oil

2 large eggs, room temperature

2 tablespoons heavy cream

For the Vanilla Mousse Frosting:

3 ounces cream cheese, room temperature

1 and ¼ cup cold heavy cream

3 tablespoons vanilla pudding mix

¼ cup powdered sugar

Instructions

1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

2. In two small bowls, mix 2 tablespoons flour and 1 tablespoon butter into each. Add gelatin to one bowl and pudding mix to the other. Mix with a fork until crumbly.

3. Spread each streusel mix on opposite sides of a lined baking tray and bake for 11 minutes. Let cool completely.

4. In a large bowl, combine cake mix, flour, oil, eggs, and cream. Mix just until no dry streaks remain.

5. Scoop the dough into 8 large balls and place on a baking sheet. Bake for 9 minutes and let cool for 15 minutes before transferring.

6. In a stand mixer, beat the cream cheese until smooth. Switch to a whisk attachment and add heavy cream, pudding mix, and powdered sugar. Beat for about 60 seconds until thick and fluffy.

7. Pipe frosting on the cooled cookies and sprinkle with streusel topping. Press gently so it sticks.

8. Refrigerate cookies for at least 30 minutes before serving.

Notes

If your streusel softens during storage, bake it for a few minutes to crisp it back up.
